GIngerbread Cupcakes with Cream Cheese Frosting

 Due to the year there has not been a lot of baking done (small quantities for home).  Both Nigel and I lost our mothers this year, we also welcomed a new granddaughter.  This entry is a little bitter sweet as tomorrow is Nigel's last day with the company.

Although I have been baking almost every week, for the office, since Nigel started with the company in 2004 this blog was not created until 2007.

This week I have made Gingerbread Cupcakes with Cream Cheese Frosting.  As this is the last bake there will not be the traditional Mince Pies and Sausage Rolls on Christmas Eve.

Let me take this opportunity to wish everyone Merry Christmas or whichever holiday you celebrate.  Hopefully next year will be a much better year.

Cranberry Bliss Muffins

Due to circumstances beyond my control (namely, Corona Virus) Nigel has been working home.  This has meant that baking has only been done for immediate family only.   After the area being place in the 'red zone'  Thanksgiving was done online with the complete meal being cooked by us and individually packaged and picked up from the porch.

Today I have baked Cranberry Bliss Muffins.  Muffins were made as they are individual portions.

Cinnamon Sugar Mini Pancake Muffins

These are unprecedented times, with the worldwide spread of the Corona virus, we all need to adapt and I am no exception.  Generally, my day to day has not changed except for the fact that groups where socialization takes place have been temporarily cancelled.

I did, for a moment, consider taking a break from baking but I have changed it up.  So that no one has to cut anything and touch things that others have touched (other than myself and I can assure you that my hands were so dry from washing them constantly) I have made mini muffins at the suggestion of Nigel.

Not all recipes translate well to be baked in a much smaller form so I went in search of some mini muffin recipes and came up with these Cinnamon Sugar Mini Pancake Muffins.

I will keep baking as long as people and ingredients allow in these difficult times.

Glazed Lemon Cake

The arrival of the cake will be a little late today (due to an early conference call).

Looking back at this blog it would appear that the Glazed Lemon Cake has not made an appearance since mid-September 2019.  I had lemons and so decided on the ever popular Glazed Lemon Cake.

French Fruit Braid

Last week I intend to make a French Fruit Braid but due to circumstances beyond my control I had to make something that did not take as long to prepare.  Therefore, vanilla cake was made.  This week we had power and I had previously made the filling for the recipe intended and so have made the French Fruit Braid for today.

Vanilla Cake with Cream Cheese Frosting

Having an excess of apples it was decided earlier in the week that the baking for today would be French Fruit Braid.  Until lunchtime yesterday this was still the plan, however the best laid plans often have to be changed on the fly.  This is what happened yesterday as the power went out just as I was about to start.

Originally only supposed to be out for a couple of hours it was off long enough to warrant a rethink.  This being said I have made a Vanilla Cake and topped it with a Cream Cheese Frosting.

Carrot Cake

This week I have made a Carrot Cake for your enjoyment.  I am trying out a different recipe and have made some changes.

The usual recipe is a British one and does not always work well without modification. Eggs are not graded the same and self-raising is different.
